Is there any special dish that brings back fond memories of your early childhood? Well in my case my mother’s spicy chicken masala curry reminds me of our Sunday lunch when the whole family used to sit together, eat and talk about the week’s happenings.
Recipes are very essential whenever you cook any food item. So, I got the recipe from my mom as my friends were planning to come down and spend the weekend at my place. So, I thought why not surprise them with a dish that reminds me of happy memories of my early childhood. The major raw condiment that is used in this dish includes the cashew nut paste. The presence of the chilli powder and black pepper makes the dish more spicy and tasty. If the spices are nicely mixed up with the cashew nuts then it can develop a yummy spicy flavor.
It will take maximum of 35 minutes to cook this South Indian cuisine. The recipe that I am going to describe out here is sufficient enough for serving 4 to 5 persons.
Ingredients needed to prepare Spicy Chicken Masala Curry:
Take washed ½ kg chicken that are sliced into several pieces and marinate it along with the following -
1) 3 tbsp of curds
2) Turmeric powder (¼ tsp)
3) Red chilli powder (1 tsp) and salt
4) Then, take 6 to 7 cashew nuts
5) 4 to 5 tsp milk and make a paste of them
Then you have to dry roast the ingredients such as –
1) 1” Cinnamon
2) 3 Cloves
3) 10-12 curry leaves make a fine powder of them
4) 3-4 tsp oil
5) 2 finely chopped onions
6) 1 nicely chopped tomato
7) Ginger-garlic paste (1 tsp)
8) Coriander powder (1 tsp)
9) Cumin powder (¼ tsp)
10) Black pepper powder (3/4 tsp) and coriander leaves
So, these are the ingredients that you need in order to prepare the lip smacking Spicy Chicken Masala Curry.
Steps how to cook this food item:
1. Marinate the chicken in salt, turmeric powder, chilli powder and curds for at least of 20 minutes.
2. In the meantime, make a paste of the milk and cashew nuts. Then, dry roast the cloves, cinnamon and curry leaves and then make a fine powder out of these ingredients.
3. Then you need to put oil (1 ½ tsp) in the cooking vessel and heat them at a low temperature. Add onions and deep-fry them till the color turns reddish. After this add ginger-garlic paste and again deep-fry them for maximum of 3 to 4 minutes.
4. After that put cumin powder, coriander powder and pepper powder in the vessel and fry them for a minute and then you can give the chopped tomatoes and fry them for few minutes. Stir the ingredients nicely in the vessel and cook them till it becomes dry. Then turn off the gas. Cool and grind the cooked masala nicely and keep it aside.
5. Then, again put oil (1 ½ tsp) into the vessel and heat it on a low temperature. Add the marinated chicken and cook them for 5 minutes on high flame. Follow it up by reducing the flame and cover the vessel with a plate and cook them for another 5 minutes.
6. Then put ground masala paste, powder of cinnamon, cashew nut paste and curry leaves and cloves into vessel and stir them well so that all the ingredients are mixed well. Then after cooking for 2 to 3 minutes add a cup of water. After you add water cook them for few minutes till the chicken pieces become soft and spongy.
7. Then, add salt, if needed. Don’t forget to give coriander leaves.
